Honey Mustard Chicken with Camembert

I’ve been buying these wicked Lilydale chicken breasts at Costco for the last few weeks. I know I’m being a sellout, but try it. And it’s grain feed! Anyway, I’ve used the chicken in just about everything except a sandwich…until now.

I did my own honey mustard sauce. All you need is: mustard (plain or Dijon according allegiance), honey and mayo (if you want to water down the taste) and a bit of garlic powder. Now, I could tell you to use this much of that, but the simplest thing is to go by taste. I also used two long slices of Camembert cheese, some lettuce and red onion.

    Dear SandwichTzar! Found your very interesting recipe for honey mustard chicken with camembert and will be preparing it for my lunch on Monday (to enjoy at work). Looking forward to it too. Hopefully I can get the right taste combination first go! I am always looking for interesting recipes that are not too ordinary and mundane. I would like to give you one you might enjoy and possibly share: Avocado Chicken Salad sandwich. 1 avocado peeled, stoned and sliced; 1 cup chicken (cooked and diced); 1 cup apple (peeled, cored and diced); 1/2 cup celery (finely chopped); 2 tablespoons almonds (slivered) and 4 tablespoons mayonnaise. Combine and spread on sandwiches or serve as a salad over tomatoes or whatever you can think of. Best wishes. Wendy (Australia).
