Blackened Chicken Melt

This is my blackened chicken sandwich with melted Cheddar cheese on ciabatta. First, I used the same Lilydale chicken breast from my Honey Mustard Chicken with Camembert . Second, you will need cajun spice. You can find cajun mix at your grocery or you can make your own. Personally, I love this one . I use it with chicken, seafood and veggies.

You start by warming a pan over medium heat. Melt a slice of butter and add a few strips of chicken. Sautee the chicken on each side then sprinkle with the cajun mix. Stir the chicken until it’s fully coated and cook until it is nice and brown. Gather all the chicken at the center of the pan and sprinkle grated Cheddar cheese on top of it. Wait until the cheese is melted. Set aside.

Slice the ciabatta in two and toast it in the oven. Pour a bit of infused olive oil on one side and add a bit of lettuce and a few onion rings. With a spatula, scoop the chicken and put it on top and voila!

This is a really good sandwich, but be careful with the amount of spice. The cajun mix is very spicy and salty. If you’re not sure, test your mix on a small sample before.
